Coconut Oatmeal Nest Cookies



8 Tablespoons Butter

1 cup packed Light Brown Sugar

1 Egg

1 teaspoon Vanilla

1 cup Flour

½ teaspoon Baking Powder

½ teaspoon Baking Soda

2 cups Shredded Coconut, divided

1 cup Old-Fashioned Oatmeal

1 10oz Bag Candy Coated Chocolate Eggs


  • Preheat the oven to 350.


  • In a small bowl whisk together flour, baking powder and baking soda. Set aside.

  • In the bowl of a stand mixer, or in a bowl with a hand mixer, beat together butter and sugar until light and fluffy. About 3-5 minutes.

  • Beat into the butter mixture the egg and vanilla.

  • Beat in flour mixture until just combined.

  • Stir in 1 cup coconut and oatmeal.

  • Roll dough into teaspoon sized balls (about 48) and roll in coconut with the top of the ball left uncovered.

  • arrange onto cookie sheets with space to spread.

  • Bake at 350 degrees for about 12 minutes.

  • Remove from oven and working quickly while the cookies are still hot, press 2-4 chocolate eggs into the center of each cookie.

  • Transfer to a cooling rack.

Makes 48 cookies.
