Ingredients
Cookies:
8 Tablespoons Butter
1 cup packed Light Brown Sugar
1 Egg
1 teaspoon Vanilla
1 cup Flour
½ teaspoon Baking Powder
½ teaspoon Baking Soda
2 cups Shredded Coconut, divided
1 cup Old-Fashioned Oatmeal
1 10oz Bag Candy Coated Chocolate Eggs
Prepare
Preheat the oven to 350.
FOR THE COOKIES:
In a small bowl whisk together flour, baking powder and baking soda. Set aside.
In the bowl of a stand mixer, or in a bowl with a hand mixer, beat together butter and sugar until light and fluffy. About 3-5 minutes.
Beat into the butter mixture the egg and vanilla.
Beat in flour mixture until just combined.
Stir in 1 cup coconut and oatmeal.
Roll dough into teaspoon sized balls (about 48) and roll in coconut with the top of the ball left uncovered.
arrange onto cookie sheets with space to spread.
Bake at 350 degrees for about 12 minutes.
Remove from oven and working quickly while the cookies are still hot, press 2-4 chocolate eggs into the center of each cookie.
Transfer to a cooling rack.
Makes 48 cookies.
