3oz Fresh Cranberries, chopped fine
1 Scallion, chopped fine
1 Jalapeño, chopped fine
1/4 cup Sugar
Juice 1/2 of a Lime
1/4 teaspoon Salt
4oz Cream Cheese
Mix together cranberries, scallion, jalapeño, sugar, lime juice and salt. It's important to hand chop ingredients for the best texture. Let mixture rest a minimum of 8 hours.
When ready to serve, strain cranberry mixture so that excess juice is removed.
Whip cream chees and spread onto a plate.
Top cream cheese with strained cranberry mixture.
Serve with crackers of your choice.
