These carrots roast into caramelized sweet-savory goodness. They are perfect on their own, as a side dish or component in a flavor dense rice bowl.
3 cubes minced Garlic -or- 3 cloves Garlic minced
3 cubes minced Ginger -or- 1 inch grated fresh Ginger
3 Tablespoons Butter
1 pound Carrots
Salt to taste
Preheat oven to 350.
Melt butter and mix with ginger and garlic.
Peel carrots (or you can leave unpeeled and washed if you prefer), trim and cut thin scores into the carrots. Do this by placing the carrots between chopsticks, skewers or other flatware to prevent cutting all the way through the carrots as you score them.
Place carrots into an oven safe skillet or other baker and brush over all with butter mixture.
Place into the oven to roast for 90 minutes.
Season with salt and serve.
