1 9oz Package Chocolate Wafer Cookies
4 Tablespoons Butter, melted
1 8oz block Cream Cheese
1/2 pint Heavy Whipping Cream
1 14oz can Sweetened Condensed Milk
1 3.4oz box Instant Chocolate Pudding Mix
1/2 cup Milk
1 Tablespoon Crème de menthe, or 1/4 teaspoon mint extract
Optionally: Coco powder, Chocolate Shavings, Chocolate Chips or Coco Nibs or Cookie Crumb for garnishing
In a blender or food processor pulse cookies until broken into a fine crumb.
Add cookie crumbs and melted butter to a 9" pie plate and stir to blend.
With a cup or hands, press cookie crumb into pie plate to form a solid crust.
In a stand mixer beat whipping cream and cream cheese until well combined light and fluffy.
Add can of condensed milk. Whip until combined.
Remove half of the cream into another bowl. Set aside.
Add chocolate pudding powder to the cream in the stand mixer. Whip until combined.
Spoon chocolate cream into the pie shell. Spread evenly.
Whisk Crème de menthe into reserved cream. Spoon mint cream over the top of the chocolate cream.
Garnish as desired.
Cover and chill in the refrigerator for at least 2 hours before serving.
Makes 1 standard sized pie.
