Meyer Lemon + Garlic Rice

This lemon rice is a perfect side dish to any tomato rich stew or other saucy mains that could use a little citrus counter-balance.


2 cups Long Grain Rice

2 Tablespoons Olive Oil

4 cloves Minced Garlic or 1 teaspoon Granulated Garlic

1/2 teaspoon Kosher Sea Salt

2 1/2 cups Water

1 Meyer Lemon, zested and juiced


  • Turn your Instapot on to high sauté.

  • Add olive oil and rice, stirring to coat the rice with oil.

  • Sauté rice, stirring frequently, until most white and opaque. Approximately 5 minutes.

  • Stir in garlic and salt.

  • Pour in water and prep Instapot to pressure cook on high for 13 minutes.

  • When cooking is complete, release the pressure, open the lid and stir lemon zest and lemon juice into the rice.

Makes 4-8 servings, depending on serving size.
