This lemon rice is a perfect side dish to any tomato rich stew or other saucy mains that could use a little citrus counter-balance.
2 cups Long Grain Rice
2 Tablespoons Olive Oil
4 cloves Minced Garlic or 1 teaspoon Granulated Garlic
1/2 teaspoon Kosher Sea Salt
2 1/2 cups Water
1 Meyer Lemon, zested and juiced
Turn your Instapot on to high sauté.
Add olive oil and rice, stirring to coat the rice with oil.
Sauté rice, stirring frequently, until most white and opaque. Approximately 5 minutes.
Stir in garlic and salt.
Pour in water and prep Instapot to pressure cook on high for 13 minutes.
When cooking is complete, release the pressure, open the lid and stir lemon zest and lemon juice into the rice.
Makes 4-8 servings, depending on serving size.
