Ingredients
2 pounds Trimmed Chicken Wings
1/2-1 cup Dill Pickle Brine - a full cup is better but will work with 1/2 cup
4 Tablespoons Butter melted
3/4 cup Pork Panko
1/2 cup grated Parmesan
1 teaspoon Vinegar Powder
1 teaspoon Dill Weed
Preparation
Combine chicken wings and dill pickle brine and brine overnight (min 12 hours)
Pre-heat oven to 375.
Remove chicken wings from brine and dry.
Melt butter in a small bowl and combine pork panko and parmesan in another small bowl.
Arrange wings on a cooling rack placed in a baking pan or directly onto a parchment lined baking sheet.
Brush butter on the wings, then dust with panko mixture.
Bake in over for 45 minutes.
Mix together vinegar powder and dill weed.
Remove wings from the oven and dust with dill weed mixture and serve.
Makes 4 servings of approximate 6 half wing or 3 whole wing portions.
