1 15 oz can Rhubarb in sauce
1 cup Flour
1 teaspoon Baking Soda
3/4 cup Sugar
2 teaspoons Vanilla
1/2 cup packed Light Brown Sugar
Preheat the oven to 350.
In a large mixing bowl, whisk together dry ingredients: flour, baking soda, granulated sugar.
Into the dry ingredients mix in the egg and vanilla. Dough will be very dry looking.
Mix in the the canned rhubarb and sauce until you have a smooth uniform thick batter.
Butter a 9 inch cake pan (square or round) or a 9"+ cast iron skillet.
Pour batter into prepared pan and smooth.
Sprinkle brown sugar over batter evenly.
Bake at 350 degrees for about 40-50 minutes. Test doneness with a toothpick, the toothpick should come out clean when the cake is done.
Cool cake for 5 minutes cut and serve.
Cake is best warm, but is also good cold. Serves well with whipped cream or ice cream.
