Roasted Mixed Mushrooms


1 lb Mushrooms - and mix you would like

4-20 sprigs of Thyme - depending on how herb dense you'd like it

2 teaspoons coarse Kosher Salt

1-2 teaspoons of Black Pepper - to your taste

2 Tablespoons Olive Oil


  • Preheat oven to 425 degrees

  • Trim mushrooms and cut into slices or quarters

  • Arrange mushrooms on a baking sheet (I line the baking sheet with parchment paper), distribute thyme, salt, pepper and olive oil over mushrooms.

  • Roast mushrooms for 15-20 minutes, stirring mushrooms as needed

  • Remove mushrooms from oven and pick out the thyme sprigs allowing the leaves to fall into the mushrooms.
