Ingredients
3 pounds Shredded Chile Verde Chicken
3 pounds thinly sliced rounds of Smoked Potatoes
1/2 cup heavy cream
1 cup grated sharp cheddar cheese
Prepare
Preheat oven to 350 degrees.
Layer Shredded Chile Verde Chicken and smoked potatoes into a heavy walled gratin baking dish:
Start with a thin layer of sauce from the Shredded Chile Verde Chicken
Layer 1/3 of the Smoked Potatoes over the sauce layer. Layer 1/3 of Shredded Chile Verde Chicken over Smoked Potatoes.
Repeat: Layer 1/3 of the Smoked Potatoes over the sauce layer. Layer 1/3 of Shredded Chile Verde Chicken over Smoked Potatoes.
Repeat: Layer 1/3 of the Smoked Potatoes over the sauce layer. Layer 1/3 of Shredded Chile Verde Chicken over Smoked Potatoes.
cover top layer of sauce with baking parchment and a heavy lid or foil over the baking dish.
Place dish into the oven and bake for 1 hour.
After initial hour bake, remove from oven, uncover baking dish, pour over potatoes cream, and top with grated cheese.
Return to oven and bake an additional 30-45 minutes until potatoes are fork tender and cheese has become a browned crust.
Remove from oven and allow to rest for 15 minutes before serving.
