3 pounds Yukon Gold Potatoes or other Potato variety
Prepare
Cut potatoes to desired size and shape for your finished recipe.
Arrange potatoes on a baking sheet or other, preferably perforated sheet pan.
Set smoker to 160 degrees and smoke potatoes for one to two hours (two hours for maximum smoke absorption)
Use potatoes in any recipe, they will still be raw, so process per recipe instructions.
