Vanilla Sugar


1 vanilla beans

4 cups superfine, caster, or standard granulated sugar


  • Pour sugar into a bowl.

  • Split vanilla bean and scrape seeds into sugar.

  • Stir sugar to distribute seeds throughout sugar.

  • Pour into an airtight container with additional space to allow for period shaking during curing process.

  • Bury the split vanilla bean into the sugar.

  • Let cure for 3 weeks* before use, shake container at least once a week

*NOTE: I often use this on day one after making it, but it will have the best flavor after 3 weeks.
