Habanero Honey-Mustard Cubano

With the pork cooked in the Instapot and the sandwich finished on the waffle iron, this is a quick preparation of this classic sandwich. The habanero honey-mustard adds a richly sweet component that balances out the brine in the pickles.


Ingredients

Instapot Pork:

1 to 1-1/2 pounds Pork Shoulder or Chops

1 teaspoon Kosher Sea Salt

1/2 teaspoons ground Black Pepper

1 Tablespoon ground Cumin

1 Tablespoon dried Oregano

2 Tablespoons Olive Oil

4 cloves garlic, smashed, chopped or minced

1 cup sour citrus juice: Orange + Lime, Meyer Lemon + Lime, Grapefruit + Lime. Any combination using at least 1 lime.

1 cup Chicken Broth

1 sliced medium Onion

1 teaspoon Red Pepper Flakes

2 Bay Leaves


Habanero Honey-Mustard Sauce:

3 Tablespoons Habanero Honey

1 Tablespoon Dijon Mustard

2 Tablespoons Grain Mustard


Additional Components for Sandwich:

4 large Sandwich Rolls or 8 smaller Ciabatta Rolls

16 slices Swiss or other Cheese

1 pound sliced Ham

Pickles


Prepare


FOR THE INSTAPOT PORK:

  • In a shallow bowl or on a plate, mix salt, pepper, cumin, oregano:

  • Coat Pork in spice mixture:

  • Add olive oil to Instapot, set to sauté, let get hot then cook pork for 4-5 minutes on each side:

  • Add remaining ingredients to the Instapot (garlic, citrus juice, broth, onions, chile flake and bay leaves) and pressure cook for 20 minutes:

  • After 20 minute cook time, allow Instapot to naturally release pressure for at least 15 minutes then release remaining pressure and remove meat (you can reserve the cooking liquid for another use, like cooking beans. You can also make the pork well ahead of time and store for later cooking).

  • Slice or pull the pork:



FOR THE HABANERO HONEY-MUSTARD SAUCE:

  • Place honey and two mustards in a bowl and whisk together:



ASSEMBLE AND COOK THE SANDWICH:

  • Slice sandwich rolls in half then layer: habanero honey-mustard, cheese, pickles, ham, pork cheese:

  • Cook the sandwich in a sandwich press for 8 minutes on medium heat -or- prepare in a waffle iron per the instructions here:

    • Pre-heat waffle iron.

    • Place sandwich in waffle iron and close being careful not to shift the the assembled sandwich. Apply gentle pressure and cook 2 minutes:

  • Turn sandwich. Cook and additional 2 minutes:

  • Turn sandwich. Cook and additional 2 minutes:

  • Turn sandwich. Cook and additional 2 minutes:

Allow to cool for a minute and slice. If making multiple sandwiches you can serve as ready or keep warm in a 180-200 degree oven while finishing your preparation.


Makes 4 large sandwiches or 8 smaller sandwiches.
