Juicy Fruit Quick Cake

Ingredients

1 pound Juicy Fruit: 6-8 Plums, Pluots, Peaches, etc.

1 cup Flour

1 teaspoon Baking Soda

1 cup granulated Sugar

1 Egg

1 teaspoon Vanilla

1/2 cup packed Brown Sugar (golden or dark)



Prepare

  • Preheat the oven to 350.

  • Over and into a bowl, rough dice fruit. You want to cut directly into the bowls so that you collect all of the juices from the fruit. It is ok to leave the skins on, unless you are using peaches. In that case, you will want to remove the skins before cutting. Set bowl aside.

  • In a large mixing bowl, whisk together dry ingredients: flour, baking soda, granulated sugar.

  • Into the dry ingredients mix in the egg and vanilla. Dough will be very dry looking.

  • Mix in the fruit and all the accumulated juices until you have a smooth uniform thick batter.

  • Butter a 9 inch cake pan (square or round) or a 9"+ cast iron skillet.

  • Pour batter into prepared pan and smooth.

  • Sprinkle brown sugar over batter evenly. If you prefer a stronger molasses flavor use dark brown sugar.

  • Bake at 350 degrees for about 40-50 minutes. Test doneness with a toothpick, the toothpick should come out clean when the cake is done.

  • Cool cake for 5 minutes cut and serve.

  • Cake is best warm, but is also good cold. Serves well with whipped cream or ice cream.
