Spiced Black-Eyed Peas

While they are a New Years dinner tradition in the Southern US to bring prosperity to the new year, they are a delicious hearty meal year round.


Ingredients

1 pound dry Black-Eyed Peas rinsed

1 Onion, diced

1 Bay Leaf

1/4 teaspoon White Pepper

1/4 teaspoon Allspice

1/4 teaspoon Cloves

1/4 teaspoon Mace

1 pound Ham Steak or a Ham Hock (optional, omit for a vegetarian/vegan version)

4 Cups Broth of your choice

Chopped Parsley to Garnish

Prepare

  • Rinse Black-eyed peas.

  • Place peas and all other ingredients (expect for the parsley) into an instapot and pressure cook on high for 50 minutes.

  • Allow the pressure to release naturally for 10 minutes. Then finish releasing the pressure.

  • Serve alone or over rice with collard greens.
