Toasted Marshmallow Chocolate Freckle Ice Cream


200 grams Marshmallows, approximate 48 large Marshmallows

1 cup Whole Milk

2 cups Heavy Cream

2-3oz Chocolate, grated (small grate) or finely chopped


  • Preheat oven to 350 degrees.

  • Line a baking sheet with baking parchment and spread marshmallows out over the baking parchment.

  • Place into the preheated oven and bake 4-12 minutes. Time will depend on how much toasted flavor you would like. More time, toasting, will result in a deeper flavor.

  • Remove marshmallows and allow to cool completely.

  • Once marshmallows are completely cool, remove from baking parchment and break into a blender.

  • Add milk to the blender and blend until marshmallows are completely dissolved into the milk.

  • Stir in cream.

  • Freeze per manufacturer's instructions in an ice cream machine.

  • Add the grated chocolate at the mix-in stage of your ice cream machine.

  • Pack ice cream and hard freeze.
