This simple dessert is elegant and light. You can just eat as-is, but they are also nice with a dollop of whipped cream or a splash of pear brandy.
Ingredients
2/3 cup Sugar
1/4 cup Pear Bandy
1 Split Vanilla Bean
6 peeled, cored and split Pears
Water
Preparation
Add the sugar, and brandy to a saucepan and stir to combine.
Add pears and stir to coat.
Cover pears to just cover with water.
Add split vanilla bean.
Cover with a round of parchment paper to keep pears submerged by adding water over the top of the parchment.
Over medium heat bring to a gentle boil.
Reduce to low, simmer 5 minutes.
Cut heat and let cool to room temperature.
Once cooled to room temperature, transfer to lidded container and store refrigerated.
