This recipe is very light lifting with a flavorful results. Great both warm or cold.
3/4 cup of Chimichurri Sauce
2 cups prepared rice, brown -or- white of any length
Stir Chimichurri Sauce into prepared rice* and serve.
Makes 6-10 Servings.
Notes: *If I am making this hot, I cook the two cups of white rice in my Instapot with 2 1/2 cups of water for 10 minutes. If I want this as a cold side, I prepare the the rice like pasta in a large pot of water, boil 10 minutes, strain, rinse with cold water and mix in the Chimichurri Sauce. It is equally good as a cold rice salad or a warm rice.
