Roasted Strawberry + Buttermilk Ice Cream


2 cups Heavy Cream

3/4 cup Caster Sugar - preferably Vanilla Sugar

1 teaspoon Vanilla

1 cup Bulgarian Buttermilk - or other full fat Buttermilk

1 batch Roasted Strawberries, strained. Reserve Syrup for another use.


  • stir cream, sugar and vanilla together until sugar is completely dissolved.

  • Stir in buttermilk.

  • Freeze per manufacturer's instructions in an ice cream machine.

  • Working quickly, turn ice cream out into a bowl and mix in roasted strawberries. Optionally you can add them at the mix-in stage of your ice cream machine, but that will result in a pink ice cream rather than a distinct buttermilk and strawberry swirl.

  • Pack ice cream and hard freeze.
