Roasted Strawberries


1 pound Strawberries

hulled and halved or quartered, depending on size

1/4 cup Sugar

1/2 teaspoon Vanilla Powder (Optional)


  • Set oven to 250° F

  • In a 9” x 13” glass or ceramic baker, mix strawberries with sugar and vanilla powder (if using) and spread to a single packed layer.

  • Roast uncovered in the oven for 3 hours.

  • Occasionally check berries as they roast, but do not disturb by more than shaking to ensure juice is not pooled on one side. If a berry starts to look too dry, gently flip the berry over.

  • When done there should be thick liquid left in the baker, if it is starting to look too dry remove from the oven ahead of the 3 hours. Depending on the size of the berries, it may take more or less than the 3 hours.

  • Once cool moved to a covered container in the refrigerator.

Makes 12oz roasted strawberries and syrup. Approximate 1 1/2 cups.
