1 pound Strawberries
hulled and halved or quartered, depending on size
1/4 cup Sugar
1/2 teaspoon Vanilla Powder (Optional)
Set oven to 250° F
In a 9” x 13” glass or ceramic baker, mix strawberries with sugar and vanilla powder (if using) and spread to a single packed layer.
Roast uncovered in the oven for 3 hours.
Occasionally check berries as they roast, but do not disturb by more than shaking to ensure juice is not pooled on one side. If a berry starts to look too dry, gently flip the berry over.
When done there should be thick liquid left in the baker, if it is starting to look too dry remove from the oven ahead of the 3 hours. Depending on the size of the berries, it may take more or less than the 3 hours.
Once cool moved to a covered container in the refrigerator.
Makes 12oz roasted strawberries and syrup. Approximate 1 1/2 cups.
